Italian style fish

Ingredients (Serves 1)

  • 120g medium cod fillet​​
  • 1 tsp olive oil​​
  • 6 cherry tomatoes​​
  • 1 garlic clove, minced​​
  • Juice of 1 lemon​​
  • 1 tsp lemon zest, grated​​
  • 1 tsp black pepper​​
  • 40g brown rice​​
  • Handful of fresh coriander, chopped

Method

  1. Preheat the oven to 200°C / 180°C fan / gas mark 6.​
  2. In a bowl mix together the olive oil, garlic, lemon juice, lemon zest and black pepper.​​
  3. Place the cod fillet in a baking dish and top with the dressing.​​
  4. Add the cherry tomatoes.​​
  5. Bake in the oven for 30 minutes.​​
  6. Meanwhile, prepare the wholegrain rice according to packet instructions.​​
  7. Combine the fish and rice and enjoy with a sprinkle of fresh coriander.​
