Ingredients
- 1/4 cup dry fonio
- 1 cup water
- 1/4 red onion
- 1 tomato
- 1 cup lettuce
- juice of 1/2 lemon
- 2 tbsp parsley leaves
- 1/4 medium avocado
For the Suya Chicken:
- 1 tbsp suya powder
- 1/2 tsp garlic powder
- 1 chicken thigh
- salt to taste
- 1/2 tsp chilli powder
- 2 tsp olive oil
Method
- Marinate your chicken in 1/2 tbsp suya powder, 1/2 tsp garlic powder, salt to taste, chilli powder and 2 tsp oil. Leave to marinate for 20 mins
- Preheat your oven to 180*C and place your chicken on your grill tray to cook for 30 minutes or until fully cooked. When ready, sprinkle with 1/2 tbsp suya powder
- To cook fonio, boil 1 cup water in a saucepan and add fonio. Let boil for 3 minutes until fluffy
- For your salad, chop red onion, tomatoes, lettuce and avocado and season with juice of half a lemon
