Ingredients

  • 1/4 cup dry fonio
  • 1 cup water
  • 1/4 red onion
  • 1 tomato
  • 1 cup lettuce
  • juice of 1/2 lemon
  • 2 tbsp parsley leaves
  • 1/4 medium avocado

For the Suya Chicken:

  • 1 tbsp suya powder
  • 1/2 tsp garlic powder
  • 1 chicken thigh
  • salt to taste
  • 1/2 tsp chilli powder
  • 2 tsp olive oil

Method

  1. Marinate your chicken in 1/2 tbsp suya powder, 1/2 tsp garlic powder, salt to taste, chilli powder and 2 tsp oil. Leave to marinate for 20 mins
  2. Preheat your oven to 180*C and place your chicken on your grill tray to cook for 30 minutes or until fully cooked. When ready, sprinkle with 1/2 tbsp suya powder
  3. To cook fonio, boil 1 cup water in a saucepan and add fonio. Let boil for 3 minutes until fluffy
  4. For your salad, chop red onion, tomatoes, lettuce and avocado and season with juice of half a lemon
