Salad nicoise

400 kcal/serving, 30g carbohydrates/serving. Serves 1

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp mustard
  • 1 tsp lemon juice
  • 3 new potatoes (egg-sized)
  • 50g green beans
  • 2 eggs
  • 2 handfuls mixed green leaves

Method

  1. Boil the potatoes until soft (around 5 minutes)
  2. Boil the eggs until hard (around 10 minutes)
  3. Boil the green beans for until soft (15 minutes)
  4. Prepare the dressing by mixing together the olive oil, mustard, balsamic vinegar and lemon juice
  5. Combine the eggs, potatoes, green beans, and mixed green leaves with the dressing and enjoy!
