Ingredients
- 80g Plain flour
- 80g Ground almonds
- 80g Oats
- 50g Sugar
- 1 Tsp Cinnamon
- 1 Tsp Baking powder
- 30g Raisins
- 1 Tbsp melted coconut oil
- 120g Coconut cream
Method
- Preheat the oven to 180°C (160°C in a fan oven, 350°F or gas mark 4).
- Place the coconut oil and cream into a pan and heat on low until completely melted.
- Place all dry ingredients together in a large bowl and mix.
- Create a well in the dry mix and pour in the melted coconut cream and oil.
- Combine wet and dry ingredients thoroughly to create the cookie dough.
- Place dollops of mixture onto a baking tray using a teaspoon and press it down then bake for 15–18 minutes.
- Leave to cool and then enjoy.
