Vegan banana pancakes

Ingredients

  • 1 banana
  • 40g oats
  • 60g mixed berries
  • oil spray
  • 2 tbsp milled flax seeds
  • 6 tbsp water
  • 125g plain soya yoghurt

Method

  1. Mash the banana in a bowl using a fork.
  2. Combine the flax seeds with the water and give it a few minutes to form a gel.
  3. Add the flax seed gel and porridge oats to the mashed banana and stir well until all the ingredients are combined.
  4. Heat a non-stick frying pan over a medium heat and spray with some oil.
  5. Spoon a small amount of the batter into the pan,  approx.  7cm in diameter,  and cook for 1-2 minutes on each side (be careful when flipping  the pancakes as they can be quite delicate).
  6. Repeat the process with the remaining batter.
  7. Serve the pancakes topped with plain soya yoghurt and berries.
