Ingredients
- 2 x 100g tuna steaks
- 160g fresh mango
- 160g cherry tomatoes
- 160g red onion
- 70g couscous
- 5g fresh coriander
- 1 lemon, juiced
- 1 tsp mixed herbs
- 2 garlic cloves, minced
Method
- Preheat the oven to 220°C / 200°C fan / gas mark 7
- For your mango salsa, finely chop your red onion, tomato, coriander, and mango and add them into a large bowl. Gently mix all the ingredients together
- Once you have mixed your salsa, wait 5 minutes and mix it again to make sure all the flavours combine
- Lightly season your tuna steaks with garlic, mixed herbs, and lemon juice. Then wrap them tightly in tin foil
- Once the oven is hot, place the tuna steak in the oven and cook for 15 minutes
- When the tuna is nearly finished, add 160ml of boiling water to your uncooked couscous and leave for 5 minutes until fluffy
- Serve your couscous and tuna on a plate and add the salsa on top of them
