Ingredients
- 1 tuna can in brine
- 55g wholegrain pasta, boiled
- 5 cherry tomatoes, halved
- 1 Handful fresh parsley, chopped
- 2 tsp lemon juice
- 1 tsp olive oil
- 1 tsp tomato puree
Method
- Boil the wholegrain pasta according to packet instructions and set aside to cool.
- Mix together the olive oil, lemon juice and tomato puree to make the dressing
- Combine the boiled pasta, tuna fish, olives and cherry tomatoes
- Add the dressing and sprinkle some fresh parsley on top
