Ingredients

  • 1 tuna can in brine
  • 55g wholegrain pasta, boiled
  • 5 cherry tomatoes, halved
  • 1 Handful fresh parsley, chopped
  • 2 tsp lemon juice
  • 1 tsp olive oil
  • 1 tsp tomato puree

Method

  1. Boil the wholegrain pasta according to packet instructions and set aside to cool. 
  2. Mix together the olive oil, lemon juice and tomato puree to make the dressing
  3. Combine the boiled pasta, tuna fish, olives and cherry tomatoes
  4. Add the dressing and sprinkle some fresh parsley on top
