Ingredients
- 120g white cod
- 1 tbsp olive oil
- 1 tsp of lime juice
- 1/2 tsp turmeric powder
- 1/2 tsp of cumin seeds
- 1/2 tsp coriander powder
- 1/2 tsp chilli powder
- 1 medium sized tomato, chopped
- 2 crushed garlic cloves
- 1 small onion, chopped
- 2 medium sized potatoes (approx. 270g), peeled and chopped in cubes
- 125ml water
- coriander leaves (optional)
Method
- Heat oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until they turn golden brown
- Add the chopped tomato, turmeric powder, cumin seeds, coriander powder, lime juice, and chili powder. Stir well and cook for a couple of minutes until the tomatoes soften
- Add the diced potatoes and water. Cover the pan and simmer for about 8-10 minutes or until the potatoes are tender
- Place the fish on top of the cooked potatoes in the pan. Cover the pan again and cook for an additional 5-6 minutes or until the fish is cooked through
- Once the fish is cooked, carefully transfer it to a plate, along with the potatoes and curry sauce. Garnish with fresh coriander leaves, if desired
