Ingredients

  • 160g tofu, cubed
  • 80g bell pepper
  • 2 tsp jerk seasoning
  • 2 tsp olive oil
  • 40g wholegrain brown rice
  • 60g frozen peas

Method

  1. In a bowl combine the olive oil, jerk seasoning and tofu and leave to marinate for 30 minutes
  2. Preheat the oven to 180°C
  3. Cook the wholegrain rice according to packet instructions
  4. Boil the peas in water until soft (around 10 minutes)
  5. Evenly distribute the tofu and pepper on the skewers
  6. Place the skewers on a baking tray and bake for 20-25 minutes
  7. Enjoy the tofu skewers with the rice and peas
