Ingredients

  • 80g king prawns
  • 40g sweet pepper, diced
  • 1 tsp jerk seasoning
  • 1 tsp olive oil
  • 20g wholegrain brown rice
  • 30g frozen peas

Method

  1. In a bowl combine the olive oil, jerk seasoning and prawns and leave to marinate for 30 minutes.
  2. Preheat the oven to 180°C.
  3. Cook the wholegrain rice according to packet instructions.
  4. Boil the peas in water until soft (around 10 minutes).
  5. Evenly distribute the prawns and pepper on the skewers.
  6. Place the skewers on a baking tray and bake for 20-25 minutes.
  7. Enjoy the prawn skewers with the rice and peas.
